January - Platanos Fritos con frijoles volteados
Sweet fried plantain served with savoury refried black beans, the perfect combination of sweet and savoury, a popular Guatemalan breakfast combo.
February - Tamalitos de elote
Tamalitos are similar to tamales, made from a corn flour dough known as masa and steamed in a corn husk or banana leaf Tamalitos de loroco which is an edible flower are also delicious and vegan friendly.
March - Rellenitos de papa
Street food heaven! These small potato filled parcels are topped with a colourful mixture of cabbage, onion, guacamole and fresh chopped parsley, completely impossible to eat without getting in a mess!
April - Callos vegetarianos
This thick stew like Spanish dish has a base of almonds and is full of tasty mushrooms and chickpeas, served with warm crusty bread, it's enough to warm anyone up after a good days hiking in the Spanish Springtime.
May - Porra
A generous helping of garlic, tomatoes, bread and olive oil come together to make this incredibly rich, tasty, traditionally Spanish dish which sits somewhere between being a sauce and a soup it's served with fried aubergine and crustily bread.
June - Nisperos
Not quite a meal but they are amazing when in season. Nispero fruit have a soft creamy yellow flesh and are sweet / sour to taste, so popular in spain that you'll often see whole festivals dedicated to them, dia del nispero, the day of the nispero is celebrated in many small villages in southern Spain.
July - Gazpacho
The best, most refreshing thing to eat during those hot summer nights in Spain. This chilled tomato based soup brings together traditional Mediterranean ingredients such as garlic, tomatoes, olive oil and crusty bread, amazing!
August - Ajo Blanco
Gazpacho's friendly cousin, ago blanco is a chilled almond soup, incredibly rich and creamy (without actually having any cream) due to the almonds and olive oil, you'll also find a surprise muscatel grape or two at the bottom of the bowl!
Rice, fresh vegetables, chickpeas, saffron and subtle spices create Spain's most popular dish, a good paella however is hard to find but when you do, its hard to beat, best eaten late at night and shared with good conversation and like minded people.
Finely sliced aubergine, lightly floured, shallow fried and served hot, tapas style drizzled in molasses (black treacle), if you're looking for one excuse to visit Spain in 2015, this is it!
November - Arroz con frijoles y tortillas de maiz
Guatemala's most popular dish, rice, black beans and piping hot corn tortillas, so simple but so brilliant.
A Guatemalan Christmas special, these steamed corn parcels are filled with sweet refried beans and fruits, a unique taste and texture best eaten on the lively Christmas markets with a cup of hot ponche, fruit punch.
